Thumbs up Mangoes may be good for preventing diabetes and high cholesterol

News in Science - Mangoes for diabetes? - 27/11/2006
A mango a day may one day protect against diabetes and high cholesterol, a preliminary study suggests.

The study is analysing how individual components of the luscious summer favourite affect human cells.

And early results, presented at the Australian Health and Medical Research Congress in Melbourne this week, suggest that some mango components act on the same pathways that diabetes and cholesterol drugs target.
If this is confirmed it can only be good news all around. Mangoes are my favorite fruit. If it doesn't get confirmed I'd still eat mangoes with the same enthusiasm though.

YEEEEEEEEEAH!!! To bad we don't have mangoes in NY like DR, it's not the same taste. Mangoes take me back to summer vacations in the campo!! I can't think of any Dominican recipes that calls for mangoes if you can think of any can you post it would be great!!! Over the weekend I tried a recipe that called for plums and I used mangoes as a way of making it more "Hispanic" and it came out greeeeat.

1 large mangoe,pitted and halved
1/2 cup cake flour, sifted
2 Tbsp uncooked old fashioned oats
1/2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp table salt
2 large egg white(s)
2/3 cup sugar
2 large egg(s)
1 tsp vanilla extract

Instructions
1. Preheat oven to 350°F. Spray a 9-inch springform pan with cooking spray. Arrange plum halves, skin side down, in bottom of pan.
2. In a small bowl, whisk together flour, oatmeal, cinnamon, baking powder and salt; set aside.
3. In a large bowl, beat egg whites until soft peaks form. Gradually beat in 1/3 cup of sugar, until whites are stiff and glossy; set aside.
4. In another bowl, beat eggs and remaining 1/3 cup of sugar until mixture is thick and pale yellow; stir in vanilla.
5. Whisk 1/3 of egg-white mixture into whole-egg mixture, then fold in half of the dry ingredients. Fold in remaining whites and then remaining dry ingredients.
6. Spoon batter into pan and smooth top with spatula. Bake until very brown and somewhat firm, about 35 to 40 minutes.
7. Cool completely in pan before removing sides and inverting torte onto a serving plate.

It's not Dominican though, I came up with it.

I'll give yours a try, when we have mangoes again.

YESS!!!! I love manoges. They just gave me an excuse to eat them more often. Too bad the mangoes in Fall River, Massachusetts aren't as sweet as the ones in DR. In Boston They're not too bad, It's just one hour away. I always get them when I go see my family, though.
