A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Pera-piña (Pineapple and rice juice)


Although its name (in Spanish) suggest that this juice is made from pears, in reality it has been given this name because its taste and texture resembles that of pear juice. It is a refreshing, nutritious juice that it is also very easy to prepare.

Time: 50 minutes
Difficult: Easy
Serve: 4 people

Before starting to cook: Peel the pineapple and scrub and wash the peels clean.

Ingredients:
  • Peel of 1 medium pineapple cut into pieces
  • 1/2 cup of rice
  • 1 cup of sugar
  • 1 teaspoon of vanilla

Preparation:
  1. Boil together the pineapple and rice until the rice is very tender (about 40 minutes) adjusting water when necessary. Let cool to room temperature and mix the remaining ingredients. Blend well all the ingredients. Strain and adjust water to make 2 liters of preparation. Adjust sugar to taste. Serve chilled.

i think you made a mistake, this recipie recquires pineapple peels(la cascara de la piña) not the pineappple itself.

My mistake. It is actually the peels. Cheap, huh?

If you don't feel comfortable eating pineapple peels use the pineapple itself without the peel.
