A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Licor de mandarina (Mandarin liquor)


Learnt from my mom, this easy-to-make drink mixes the flavor of Dominican rum and the sweetness of mandarins. This drink is a tradition at Christmas, when mandarins are in season.

Difficult: Easy
Serve: 4 people

Before starting to cook: Mix the rum and the mandarin peels. Put in a jar and leave in the refrigerator for 5 days.

Ingredients:
  • 2 cups of rum
  • 1/2 cup mandarin peels
  • 1 cup of sugar
  • 1 cup of water

Preparation:
  1. Strain the rum with a clean cloth, reserve. Mix the water and the sugar and put in the fire at low heat until only a third of the liquid is left. Let cool down to room temperature. Mix the syrup with the rum. Chill before serving.

This is a very cool way to have your rum without a frown. A lady's drink...
Just try not to marinade those peels more than 5 days. Next time I will try to remove most of the white pit inside the mandarin skin; because it makes the drink a little bitter. Make sure your mandarins are of good quality. Try it for Xmas.
