A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Flan de auyama (Gem squash pudding)


I had heard about this dessert numerous times but had never have the opportunity to try it. The recipe was recently submitted to us by Amalfi throughAunt Ilana. Thanks to her for the contribution. We encourage you to also try it, it is easy to prepare and delicious, its flavor somewhere between majarete and flan.

Time: 30 minutes
Difficulty: Easy
Serve: 4 people

Before starting to cook:
No previous preparation is required.

Ingredients:
  • 2 lb of gem squash (auyama)
  • 3 cups of evaporated milk
  • 3 cups of coconut milk
  • 1 cup of sugar
  • 6 tablespoons of corn starch
  • 1/2 cup of raisins
  • Cinnamon powder
  • 2 cinnamon sticks
  • 1 teaspoon of butter (to grease the mold)
  • Salt

Preparation:
  1. Boil the gem squash with a pinch of salt and the cinnamon sticks until it is tender. Take out of the water and let cool down to room temperature. Peel the squash.
  2. In a blender mix the remaining ingredients (except for the raisins). Put on a pot over medium heat. Add the raisins and stir constantly to prevent it from sticking to the pot and burning. When the mixture has turned thick enough to stick to the spoon (about 10 minutes) turn off the heat. Let cool for about 5 minutes.
  3. Grease a flan mold with butter. Pour the mixture into the pan and chill for about 2 hours before taking out of the mold. Decorate with mint leaves or whipped cream.
