A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Casquitos de guayaba (Guava in light caramel)


This is a very light and easy-to-prepare recipe that even the beginner cook will not find difficult mastering.

Time: 30 minutes
Difficulty: Easy
Serve: 4 people

Before starting to cook: No previous preparation is required.

Ingredients:
  • 4 large guavas
  • 1/2 cup of sugar
  • 2 cinnamon sticks
  • 1 teaspoon of vanilla extract

Preparation:
  1. Peel the guavas. Slice the guavas and scoop out the seeds. If the guavas are big slice them into strips. Boil the seeds for 15 minutes adding water when necessary to keep at least two cups of liquid. Sieve and get rid of the seeds. Add the guava slices and vanilla and return to the fire until the guava is tender, adjust water when necessary. Reduce liquid to produce a light caramel.
  2. Chill before serving.
