A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Quesillo (Coconut caramel cream)


The recipes for quesillo and flan may look the same to the naked eye... well, they are almost the same. But by using both yolks and egg whites quesillo has a different, lighter texture. This recipe was submitted by Adriana from Austria.

Time: 45 minutes
Difficulty: Medium
Serve: 4 people

Before starting to cook: No previous preparation is required.

Ingredients:
  • 8 eggs
  • 3 cups of condensed milk
  • 3 cups of evaporated milk
  • 1 teaspoon of vanilla extract
  • ½ cup of raisins
  • ~For caramel
  • 6 tablespoons of sugar
  • 1 cup of water
Preparation:
  1. Mix the water and sugar and bring to a boil until it is turns golden brown. Pour the caramel in the tin pan and spread evenly.
  2. Mix all the ingredients for the quesillo and stir until they are well incorporated. Pour in the mold. Put water to boil in a large pot. Fold a clean towel and put in on the bottom, put the pan with the mixture on top of the towel. Let the water boil at low temperature until the mixture has hardened.
  3. Chill before serving.
