A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Mala Rabia (Guava and plantain in caramel)


One of our forum regulars asked us about this recipe, which I had never heard of before. After inquiring for some days I found someone who knew what it was, and gave me the recipe. Thanks to Doña Elsa Rincón for teaching us how to prepare this dish. I learnt that there are two version of this this: with or without milk. We give you both choices. For this recipe you will need fresh guava, but if can't find it, then we suggest you buy them canned.

Time: 30 minutes
Difficulty: Easy
Serve: 4 people

Before starting to cook: No previous preparation is required.

Ingredients:
  • 1/2 cup of sugar
  • 3 large guavas
  • 3 cups of water
  • 1 very ripe plantain
  • 1 cup of sweet potatoes, boiled and cut into small cubes
  • Cinnamon sticks
  • 1 cup of evaporated milk (optional)

Preparation:
  1. Slice the guavas and scoop out the seeds. Boil the slices of guava and the seeds for 30 minutes adding water when necessary to keep at least two cups of liquid. Sieve and get rid of the seeds. Add cinnamon and sugar to the liquid and put back on the fire, add the plantain and sweet potatoes until they are tender, add guava. If you decided to make it with milk, add the milk now, if not reduce the liquid to obtain a light caramel.
  2. Chill before serving.
