A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Caramelo relleno de dulce (Caramel-covered candy)


During the break in pretty much any public school in the Dominican Rep. you will be able to find a vendor selling this delicious candies filled with milk and coconut cream and covered with hard caramel.

Time: 35 minutes
Difficulty: Medium
Serve: 4 people

Before starting to cook:
Oil a flat surface or cookie sheet.

Ingredients:
  • ~To cover the cookie sheet
  • 1 teaspoon of oil
    ~For the filling
  • 1/2 cup ground coconut
  • 1 cup of condensed milk
  • 1/2 cup of sugar
    ~For the caramel
  • 2 cups of sugar
  • 4 tablespoons of water
  • 1 teaspoon of red food colorant
Preparation:
  1. Mix the all the ingredients for the filling in an iron pot and bring to a boil. Stir regularly to avoid sticking. When it hardens turn off the heat. Let cool to room temperature. Put a teaspoon of the mixture in the palm of your hands and form a balls with it. Reserve.
  2. Mix all the ingredients for the caramel in a pot and bring to a boil. When it breaks a boil turn off the heat. Submerge the balls in the caramel making sure they are covered in caramel. With a spoon take out of the caramel and immediately put on the oiled surface. Stick a toothpick and let cool down to room temperature before serving.
