A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Gofio (Sugary corn powder)


"Gooooffffffiooo!", scream the kids with their mouth full of this sweet powder, covering their unsuspecting friends with one of Dominican children's traditional snacks. This recipe is originally prepared using dry corn grain that would be ground in a big mortar, in this version we will use regular medium-grain corn flour.

Time: 15 minutes
Difficulty: Easy
Serve: 4 people

Before starting to cook: No prior preparation is required.

Ingredients:
  • 1 cup of medium-grain corn flour
  • 1 cup of sugar

Preparation:
  1. Put the corn flour in a non-sticky pan at medium heat. Stir constantly until it acquires a uniform light brown color. Turn off the fire. Mix in a bowl the corn flour and sugar. Let cool to room temperature. Serve in paper cones, seal the end.

Ahh this takes me back to my childhood back in DR. I used this recipe to make it for my filipino teacher and she loved it since it's also popular in her country.

My mother used to put sugar Smack cereal in the blender and blend until powder and it taste just like the original
