A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Coconetes (Coconut biscuits)


These biscuits are very popular in the Dominican Republic. You can walk to any colmado and you will in all likehood find them. Its preparation is easy and it is a sure-bet with kids.

Time: 30 minutes
Difficult: Medium
Serve: 4 people

Before starting to cook: Butter and flour a baking tray. Pre-heat oven to 300 °F.

Ingredients:
  • 1 cup of grated coconut
  • 1/2 cup of brown sugar
  • 1 1/4 cup of butter
  • 2 eggs
  • 1 1/2 cup of flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of cinnamon powder (optional)
  • A pinch of salt

Preparation:
  1. Sift baking soda, cinnamon, salt and flour together, reserve. Mix sugar and butter and beat at low speed until the butter acquires a light color. Add eggs, one by one, while beating continuously. Mix in the coconut with a spatula, followed by flour.
  2. One spoonful at a time, make little mounds of the batter on the baking tray. Bake until they turn golden brown. Cool to room temperature before serving.

Question

Can you please clarify on whether it is baking soda or baking powder that should be used. One is listed in the ingredient list, and another is used in the instructions. Would appreicate it.
