A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Dulce de maní o ajonjolí (peanut or sesame candy)


A descendant of the Spanish turrón, this an easy-to-make and very popular candy in the Dominican Republic. You can either use sesame or toasted peanuts for it, both are delicious.

Time: 15 minutes
Difficulty: Easy
Serve: 4 people

Before starting to cook:
Oil a medium-sized metal baking pan or a few small ones.

Ingredients:
  • 1 cup of roasted unsalted peanuts
  • 1/2 cup white sugar
  • 1/3 cup water
  • 1 teaspoon of peanut oil (to oil the baking pan)

Preparation:
  1. Mix sugar and water and put in heavy saucepan over low heat. Stir constantly until it turns into a thick dark caramel (threads of caramel will stick to the spoon when you take it out). Mix in the peanuts. Pour carefully into prepared baking pan. Let harden and cool down to room temperature before removing from the pan. Cut into squares if you used a large mold.

I have a lot of sesame at home. I looked to see if any Dominican recipes used it and I found this. It sounds easy, I'll give it a try.
