I think regular milk will not give u the creaminess of evaporated milk but I remember having seen a recipe for making your own evaporated milk on this site. I suggest you make a search on this website.

?to many flan recipes?

I'm having a flan dilema, well for years my mother has been making her flan with about 8 whole eggs....Now I have also heard to make it with maybe 4 or 3 whole eggs combined with 3 or 4 yolks... then I see that you could use simply 8 yolks....Now I want to know what is the difference?. Is the creaminess and texture obvious when using different recipes?

I'm planning to make a flan for this coming weekend and any suggestions will help me make up my mind as to which recipe I will follow. I see the recipe here is 8 yolks and I would love to try it but have never done it that way so I may need a practice run. ANy opinions experience or sugestions....

There is another recipe that uses whole eggs: Quesillo (Caramel cream)

The results are quite different. Try whichever you wish.

That is true I actually call it quesillo with the whole eggs but i thought it was just many different version to one thing with two names. Sounds confusing but now i get it. JAJAJAJA I've been cracking up I should of known this.
Thank you so much for helping clear that up.
I actually made the flan last night with coconut milk instead as a test and it is very creamy and does not rise like the quesillo. It came out perfectly smooth all around the top and edges. I was so proud. Since i never make this with just yolks (flan) I was unsure if the texture, it is supposed to be this creamy right.

I tried this recipe this weekend and it turned out GREAT!!!! I followed the directions just as they are here and the turn out was delicious! Thanks Aunt Clara!

I use 5 to 6 eggs, one can of condensed milk and 1 of sweeted milk, 1 teaspoon of vanilla extract and it comes out perfect. My got the bubbles yesterday, but after few minutes the bubbles disappear.

I learned to do it thru this recipe, but you know that everybody can make their our susbtitutions.
