A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Pan de batata (Sweet potatoes pudding)


Pan de Batata is a delicious dessert with a very exotic and spicy taste. The aroma of cinnamon and cloves, and the touch of the ginger makes it the very embodiment of tropical cuisine.

Time: 20 Mins
Difficulty: Medium
Serve: 4 people

Before starting to cook: Butter up the bottom of a deep baking pan. Heat up the oven to 350 °F

Ingredients:
  • 2 lbs of sweet potatoes
  • 4 cinnamon sticks
  • 2 eggs
  • 1 tablespoon cloves
  • 1 1/2 cup of sugar
  • 1 1/2 cups of whole milk
  • 1 teaspoon of salt
  • 1/2 cup of butter
  • 1/2 cup finely chopped coconut flesh
  • 1 teaspoon of grated ginger root.
  • 1 teaspoon of cinnamon powder
  • 1/2 teaspoon nutmeg powder

Preparation:
  1. Peel the sweet potatoes. Grate with the least coarse side of your grater.
  2. Mix all the ingredients. Pour the mixture into the baking pan and put in the oven for 30 minutes. Pinch with a clean knife, if it doesn't stick to the knife, take out of the oven. Let it cool down before taking out of the pan. Serve as dessert or accompanying hot cocoa or coffee.

trate esta receta, pero cuando lo intente partir, se desmorono, mi mama tiene el libro mujer 2000 de silvia h de pou y ahi tambien hay una receta para pan de batata y cuando comparamos nos dimos cuenta porque se desmorono al partir, les falto poner en los ingredientes, la harina de trigo y los huevos... la harina para que seque y los huevos para que peguen. pero el sabor es riquisimo, solo les queria dejar saber para que la corijan

Thanks for the tip. You are right that we forgot the eggs. I don't use flour though, don't like the taste but anyone should feel free to try it the way you describe it, maybe the'll like it better that way.

Hi all,
I have been looking for this recipe for a very long time. I remeber enoying a piece of this delicious dessert as a child and even though I always loved cooking, I never learned how to make it. I would like to know what is the amount of the missing ingredients before I try it. Also, if there is another version of the pan the batata it would be appreciated if someone wants to share it. Thanks

I am sorry. I read in one of your posts that the eggs and flour were missing from the recipe then you replied that indeed you had forgotten the eggs and that you didn't use flour. This is what I was refering to when I asked about the missing ingredients. How many eggs? Thanks
