A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Fruta en almíbar (Fruits in light syrup)


Most Dominicans consume fruits year round, but when one wants to add a little zest to fruits, fruit in light caramel is a good choice. For this recipe you can use cherry, pineapple, orange, and papaya.

Time: 15 Mins
Difficulty: Easy
Serve: 4 people

Before starting to cook: No prior preparation is necessary.

Ingredients:
  • 4 cups of fruits
  • 3/4 cups of sugar
  • 1 pinch of salt
  • 4 Cinnamon sticks
  • 4 cups of water

Preparation:
  1. If using oranges peel the skin off and try to get rid of as much of the white skin as possible. Cut the fruit into pieces of about 1 inch cubes (if necessary). Mix all the ingredients. Put the mixture in a iron pot, and put it on the fire at medium heat. Stir constantly to avoid sticking. When the water turns into light caramel turn off the heat.
  2. Serve in small bowls or ice cream glasses. Let cool to room temperature, then put it in the refrigerator for 15 minutes before serving.

I recently purchased the book for my boyfriend who loves Dominican food. He loves frutas en alminar so much he has been teaching all his friends how to make it.
