A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Pan de maiz (Corn meal bread)


Pan de Maiz is served with cocoa as a snack or as dessert after a meal. It is easy to prepare and very popular in the Dominican Republic. Give it a try.

Time: 40 Mins
Difficulty: Medium
Serve: 6 people

Before starting to cook: Heat up the oven to 300 °F. Reserve 4 tablespoons of sugar.

Ingredients:
  • 1 cup of softened butter
  • 4 cups of evaporated milk
  • 3 eggs
  • 3/4 cups of all purpose wheat flour
  • 1 cup of corn flour
  • 1 cup of sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/4 cup of raisins
  • 4 Cinnamon sticks
  • 10 cloves


Preparation:
  1. Stir the eggs for 1 minute. Reserve. Break the cinnamon sticks into 1 inch pieces. Mix all the ingredients and move with a wooden spoon until all the ingredients have been incorporated. Pour into the baking pan and put in the oven for 30 minutes. Pinch with a clean knife. If it doesn't stick to the knife, take out of the oven. Let cool before taking out of the pan.
  2. Serve with hot cocoa or coffee.

anything else I can use in place of the wheat and corn flours?
