| Abuela Ruth's flan My Abuela Ruth's flan, from her mother Juana, and grandmother Amalia before...passed to me, because I was the only one of the grandchildren who wanted to listen to her. It's nowhere near as wobbly as typical flan, is unbelievably rich. This is the flan that usually sells people that always say "I hate flan!"Total cook time: 2 hrs 1/2 lb Dark brown sugar 1 can sweetened condensed milk 1 can evaporated milk 6 whole eggs 1 pkg (8 oz.) cream cheese * find the ingredients blend better in a blender, and need to be at room temp. Turn oven to 300 F. In a blender, combine the milks, eggs, and cream cheese until smooth. in a hot skillet, melt the brown sugar with a couple of tablespoons of water until melted and just started to bubble. Turn off the heat. Use a smaller, shallow pan for the flan, it just wont work in a deep pan. I even use a loaf pan, or shallow cake, or quiche pan, and it works well for larger groups of people. Also works well in individual ramekins or custard cups, make a nice individual presentation that can be garnished with some mint leaves, or coco rallado. pour your melted sugar (right away!) into whatever you'll be using to bake the flan, until it coats the bottom of the container and comes slightly up. Pour in your batter. Set the container into a large pan with water that comes halfway up the container. cover with foil, and set carefully in the oven. After 1 hour, remove the foil. Cook for another hour. Test for doneness with a toothpick. chill for as long as possible before running a knife along the edges and inverting it onto a plate. serve immediately. |
