I made up this one when I had a surplus of
Repollo guisado (Stewed cabbage). It's very delicious, and looks very nice. You can have it for a light lunch, or serve as buffet food.
Ingredients (4 ppl)- 2 cups of repollo guisado (recipe in the link above)
- 1/2 cup of low fat cream cheese
- 8 hard-boiled, peeled quail eggs (or 2 chicken eggs cut into quarters)
- 4 slices of granola, or whole-wheat bread (or 8 mini-loaf slices)
- Salt and pepper
Preparation: - Reduce all the liquid in the repollo guisado over low heat. Cool to room tempearture.
- If you are using regular-size slices cut them in half. Spread cheese on the bread and top with the repollo guisado. Garnish with the quail eggs.
- Add salt and pepper to taste.
