pernil al horno roasted pork shoulder

1 pork shoulder ( about 5 pds)
3 garlic cloves, smashed
1 tablespoon oregano
5 tablespoon salt
1 tablespoon ground black pepper
3 tablespoons extra-virgin olive oil


placxe the pork, fat-side up, in a roasting pan. using a sharp knife make small cuts on the meat. mash the garlic, oregano, salt,pepper, and oil into a paste. rub garlic paste all over the pork, being sure to get in the cuts you made. so the salt can penetrate the meat and pull out the mositure. cover the pork with plastic wrap and let ot marinate int the refrigerator overnight.


preheat oven to 350

roast pork for about 2 1/2 hours, or 30 mins per pound:

let rest for 10 mins before slicing.
