This is one of my favorites.
12 tiger or jumbo shrimps
2 eggs
Juice of 1 lemon
1/2 cup cornstarch
Salt and pepper to taste
1/2 cup soy sauce
Peel, devein and butterfly shrimps but leave the tail. Marinate in lemon juice, soy sauce, salt and pepper for about 15 minutes. Wisk eggs and mix with cornstarch. Dip shrimp in batter. Deep fry and drain on paper towel. Serve with soy sweet and sour sauce.
