I recently had the honour of previewing the new mofongo dish at Adrian Tropical. This Dominican restaurant chain is introducing a new 'light' range with vegetarian versions of traditional Dominican dishes.

This mofongo is made with cashew nuts and a light garlicky mushroom sauce. Very tasty, although not what I would call 'light'.
