Article Preparing "agrio de naranja"


Somebody said the other day that a Sancocho would not be the same without "agrio de naranja". "What is that?" you probably asked yourself, well, it is a home-made substitute for vinegar with a spicy taste. It adds just the kick your stew might be lacking. This is not exactly a dish, thus the fact that it's not in the recipe section.

You need:
  • A large, clean glass bottle
  • 20 sour oranges
  • 13 Scotch bonnet peppers
  • 5 cloves of garlic, sliced in halves
  • 3 sprigs of fresh oregano
  • A sprig of thyme

To prepare it:
  1. Wash 20 sour oranges.
  2. Squeeze the juice and sieve.
  3. Fill up the bottle and add the remaining ingredients.
  4. Macerate for a few days in the refrigerator. Use to season stews (each person should be able to add it to taste to their own serving). Keep refrigerated.
