A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Tres leches (Three-milk cake)


There are many theories on the origin of this dish, whatever it might be the fact is that it has become part of our vernacular cuisine and everybody's favorite.

Time: 90 Mins
Difficulty: Medium
Serve: 4 people

Before starting to cook: Butter up and flour a baking pan (5-inch tall by 10 inches in diameter). Heat up the oven to 350 °F (175 °C).

Ingredients:
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup of soft butter
  • 1 teaspoon of vanilla extract
  • 1/2 cup caster sugar
  • 3 eggs
  • ~For garnishing:
  • 1 cup of whipping cream
  • 2 cups whole milk
  • 4 cups of sweetened, condensed milk
  • 2 cups of evaporated milk
  • ⅓ cup of sugar

Preparation:
  1. Beat together butter and sugar until it is light and fluffy and has a very light yellow color (about 3-4 mins). One by one add the eggs and continue beating well after adding each new egg. Add vanilla and flour and beat until you obtain a smooth batter. Pour batter into the baking pan. Bake until a knife inserted in the center comes out clean (about 35 mins). Cool down to room temperature.
  2. For the garnish, mix in the milk, evaporated and condensed milk. Pour the milk mixture on top of the cake and soak in the refrigerator, bathing it regularly until it has absorbed half of the liquid.
  3. Beat the whipping cream until it starts to form peaks. Add the sugar and keep beating until it is thoroughly mixed. Spread the whipped cream on the cake and chill for another 10 minutes before serving.

Question I need Help!

I would like to know if I can not get evaporated milk what else can a use? I live in Colombia and we don't use that here and I would really like to try this cake. Thank you.

I think that it is possible that evaporated milk is marketed under another name in Colombia. It is hard to believe it isn't available. In the Dominican the most popular brand is Leche Evaporada Carnation. See if you can find that there.

Unhappy Help

No sorry but here in cali we do not have that. All we have is condensed milk and cream. That is all I have looked for it here and nothing. Can I use something else? Can someone please help me?

I have been checking around the net, I found several mentions of leche evaporada in Colombian cooking and its sale there. Perhaps it is marketed under a brand other than Carnation. Please ask in your local supermarket.

Talking you can make your own condenced milk

You can make your very own evaporated milk, with regular milk. Take at least a half fo gallon of milk pour in to a pot and place on the stove in very low heat this method will take some time but it's well worth the wait. The milk will form a bubble but that a part of the process, let it keep cooking. The milk will change to a beige color. Once the milk evaporates and thickens its ready.

Talking word correction

you can make your own evaporated milk! All instruction are as I mentioned!
