A good Dominican meal will not be complete without a dulcito (a sweet) right before 'el cafecito' that dots the i in our meals. A tropical country and a great variety of fruits make for Dominicans' taste for juices and shakes.

Recipe Harina de maiz (Corn meal pudding)


This is a case in which a dessert dish is used also as a breakfast dish, or a light dinner dish. It all depends on how much sugar you add to the concoction. Add less sugar for main breakfast dish, more sugar to serve as dessert.

Time:
15 Mins
Difficulty: Easy
Serve: 4 people

Before starting to cook: No prior preparation is necessary.

Ingredients:
  • 4 cups of evaporated milk
  • 2 cups of water
  • 2 cups of corn meal (harina de maíz)
  • 1/2 cup of sugar (reduce depending on your taste)
  • 1 pinch of salt
  • 4 Cinnamon sticks
  • 1 teaspoon of cloves
  • A pinch of ground nutmeg

Preparation:
  1. Mix all the ingredients, put the mixture in a pot and boil at medium heat. Stir constantly to avoid sticking. When it becomes thick turn off the heat. Pour into serving dishes immediately. Serve hot if you are using it as main dish or chill to serve as dessert.

Harina de maiz

I just have a quick uestion I am wondering if I dont have enough evaporated milk can I just use normal 2% milk instead of evporated milk or mix bot to get the same amount? or do I have to use one or the other?

Yes, you can actually substitute it for whatever milk you like best.

I just made this about 5 minutes ago. I think I put to much sugar but this recipe is off the hook. To bad I didn't think of it yesterday for the potluck. It taste like the arepa without the baking in the oven. Thanks again Aunt Clara.

Aunt Clara,

This is one of the few Dominican dishes I can't make no matter how hard I try. Its really embarasing since I am Dominican Born and love it soo very much. But this and Avena a La Dominicana and Bacalao quisado always kick my butt. Whenever I am in the mood for this dish I need to bribe my hubby into making it for me. He adds a bit of Dominican Vanilla which always makes everything taste so much better yummy.
