The traditional Dominican meal is not comprised of various courses - everything is served at the same time (except dessert). This doesn't mean that soups are not a part of Dominican's diet; on the contrary. See here the fine soups in our repertoire.

Recipe Crema de auyama (Gem squash cream soup)


Crema de Auyama will make a delicious entree to your Dominican dinner. Its delicate, yet sophisticated flavors makes it suitables for all tastes and ages. This is one of my favorite Dominican dishes.

Time: 20 Mins
Difficulty: Easy
Serve: 4 people

Before starting to cook: Boil the gem squash till tender. Let cool.

Ingredients:
  • 1 lb of gem squash peeled and cut into cubes
  • 2 cups of evaporated milk
  • 1 cube of vegetable bouillon (optional)
  • 2 cup of water
  • 2 teaspoons of butter
  • 1 small red onion
  • 1 spoon of chopped parsley
  • Salt

Preparation:

  1. In a shallow pan heat the butter. Sauté the onion and parsley until they become tender adding a pinch of salt to it. Put the squash, and the rest of the ingredients in a blender. Blend well. Re-heat at medium heat. Stir regularly to avoid excessive sticking. Adjust salt to taste. When it has reached a creamy consistency turn off the heat and serve immediately.

Guys!!! I am going to attemp this soup for thanksgiving here in NYC, I'll let you know how it turns out. Ever since I visited my friend in Santo Domingo and her cook made something similar to go with his delicious rice and beans and beef, etc etc.my kids and I loooooved it and now I found it here, woohoooo. I'll let u know how it turns out.

Ok let me try posting this comment for a second time.

Ok so I made the delicious cream of squash and it was a hit, everyone loved it.
I made enough for like 15 people, of course just as a starter. I used less cream since i'm not crazy about too much cream and used chicken cube instead of veg cube but I guess you can just season with salt.

I served it in this beautiful cream colored pumpkin shaped serving dish it was beautiful.
