I can't vote! I haven't tasted mondongo but it looks good in tia clara's photo!
My grandfather used to make something very similar though, I hate the smell of tripe when it's cooking but the finished dish always looked good. My family love tripe, I don't see the big deal! I used to eat the stew and pass the pieces of tripe to my cousins, who'd devour it. I guess it's like marmite, you either love it or hate it!
