Recipe Empanaditas dulces (sweet pastry)

The perfect companion to a cup of Dominican coffee, or any of our delicious infussions and teas, it can also double as a buffet favorite. You can fill it with the marmalade of your choice, either home-made or purchased.

Time: 60 Mins
Difficulty: Medium
Serve: 4 people

Before starting to cook: Let the butter acquire room temperature. Pre-heat oven at medium temperature.

Ingredients:
  • ~For the filling
  • 1 cup of marmalade
    ~For the dough
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 2 tablespoons of cold water
  • 2 tablespoons of butter
  • 1 egg yolk
  • 1/2 tablespoon of powdered sugar
  • Salt

Preparation:
  1. Mix the baking soda, sugar, 1/4 teaspoon of salt and the flour, add the butter and mix with your hands until it forms small balls. Add water, and mix well. Mix everything with your hands on a slightly floured surface until everything is well mixed, don't knead the dough (add some flour is it is too sticky). Let dough rest in the refrigerator for ten minutes covered in plastic film.
  2. On a lightly floured surface roll out the dough. Cut out circles of about 4 inches in diameter. Put a teaspoon of the marmalade in the center, double over in a semi-circle and seal the border pressing it with a fork. Brush with the egg yolk and bake until it turns golden brown.
  3. Serve a room temperature.
