| Hello! I love your site. I'm going to make Sancocho this weekend for friends, and have a question about the first step. Do you marinate just the beef, or all of the meats? And, when you say to add the pork, is it all of the pork, or just the longaniza at that point? Thanks for your help! I'm looking forward to trying this! ![]() |

| A little late maybe, but I hope the answer helps somebody else: marinate all the meats, minus the sausage, and by pork I mean only the raw meat, the sausage is added later on n the next step. |

| Question about beef in all sancocho recipes I have found. They only mention beef preferable with bone in. What cut of beef is best to use?
